Shredded Cabbage - Day 6 May Daily Diary

I'm trying to add vegetables and fruit to every meal and cabbage is packed with nutrients and also low in calories.

I shred it in the food processor and add it to soups and salads.

There are plenty of cabbage soup recipes online and it's a good way to use leftover vegetables. Put chicken broth, shredded cabbage, a can of diced tomatoes, other vegetables (carrots are good) to a slow cooker. Add any seasonings you prefer, I usually use the Italian diced tomatoes which gives the soup a little flavor.
